Paleo Apple Sandwich

There are some things that one should never say to the person they are dating:

1. If we were on The Bachelor, would you pick me?

2. You don’t know what The Bachelor is? Oh, it’s this horrible show… that I can’t believe I’m admitting to ever having watched… where a bunch of ladies fight over some guy. I think this season he’s a farmer…

3. So, really… if we were on The Bachelor, would you pick me?

Believe me, this conversation can’t go anywhere but downhill.

Note to self: Don’t talk about The Bachelor anymore. Instead, make awesome paleo sandwiches.

Okay, let’s switch topics here. Can I tell you about something I’m really excited about? This Paleo Apple Sandwich. (!!!)

I was really missing bread this week and craving that feeling when you take the first bite into a perfectly crispy grilled sandwich. So I got to work and was playing around with different veggies I could use to replace bread when I realized that apples make the perfect bread replacement!

TA DA! Look, it’s a Paleo Apple Sandwich! How awesome is that?!

One of the things that I struggle with when it comes to replacing bread/being grain-free is that I don’t want to spend a ton of time baking something… anyone else relate?

My favorite part of this sandwich (well, besides the fact that it’s delicious) is that the only prep involves slicing an apple!  You can use any apple in this recipe, but my favorites are organic Opal Apples because they’re perfectly crispy, slightly tart and sweet, and locally grown here in Washington.

It seems silly to create a recipe for this (and I definitely want to leave room for your creativity!) so here are some of my fave combos to get you thinking:

  • Organic sliced turkey with spinach, yellow mustard, avocado, sea salt, and red pepper flakes
  • Hummus with field greens and sliced olives
  • Banh mi: choice of meat with shredded carrots, daikon radish, cilantro, and cucumber
  • Tuna Salad (or mock tuna salad!)
  • Classic BLT (bacon, lettuce & tomato)
  • Breakfast sandwich with a fried egg, sautéed mushrooms, and caramelized onions
