Before I start raving about these amazing grain-free chocolate chip muffins, I have to tell you a really important lesson I learned while making them: do not touch the hot pan. I mean it.
But, if you do happen to touch the hot pan on accident (ow!), try this little trick: soak your fingers in a cup of cold water for about 30 minutes and this will ease the pain. The cold water pulls heat away from the burn and helps to reduce swelling/blistering. Handy trick, right?
Okay, now we can talk about these muffins. I am obsessed with these muffins. Cakey, chocolatey goodness. Yesss.
They’re grain-free and made with coconut flour, but my favorite thing about these is that they’re sweetened naturally with applesauce – no other sweeteners! For the average person, these probably wouldn’t seem sweet enough, but if you’re looking to cut back on sugar or already follow a low-sugar diet I know you’ll love these.
These muffins are the perfect healthy way to satisfy a sugar craving. I love them on their own, but they’re even better if you can enjoy them with some coffee (or my favorite herbal coffee alternative!)
And, if you’re living the no sugar or low sugar lifestyle like myself, you need to know about these awesome chocolate chips that my friend introduced me to because they’re sweetened with stevia! I’m usually pretty picky when it comes to products sweetened with stevia because I don’t like the aftertaste that stevia can have, but I haven’t noticed an aftertaste with these at all. I’ve eaten these straight out of the bag and they taste just like regular dark chocolate chips (minus the sugar high). If you want to try them, the brand is called Lily’s chocolate and I’ve been able to find them at Whole Foods and online. (They’re a little pricey compared to regular chocolate chips, but I think they’re worth it if you’re trying to avoid sugar and artificial sweeteners.)
- 5 organic, free-range eggs
- 1 cup (no sugar added) applesauce
- ¼ cup melted coconut oil
- 1 teaspoon baking soda
- 1 teaspoon vanilla
- 1 tablespoon cacao powder
- ½ cup coconut flour
- ⅓ cup chocolate chips (I really like this brand because they're sweetened with stevia)
- Preheat oven to 400 degrees.
- Add the eggs to a large bowl and whisk until frothy.
- Add the applesauce, coconut oil, baking soda, vanilla, cocoa powder, and coconut flour the bowl with the eggs and whisk until smooth.
- Add about half of the chocolate chips and mix until incorporated.
- Grease a muffin tin with a dab of coconut oil and fill each tin with the muffin mixture. Sprinkle remaining chocolate chips over the top of the muffins.
- Bake for 13 -15 minutes, or until lightly browned and set in the middle.
