Opal Apple Salsa

So, I hear there’s this little thing happening this weekend. Some people might call this… the Super Bowl.

Truth be told, I’m not a football fan. And maybe, just maybe, I’ve never seen a football game in my life. (truth)

But, the one thing I do know about the Super Bowl (and football in general) is that it’s a time for people to get together around a television and eat. And that I can help with. Enter Opal Apple Salsa.

Opal Apple Salsa is honestly one of the best snacks I’ve made in a long, long time. It takes three simple ingredients (Opal apples, fresh cilantro, and red onions) and turns them into this crunchy, tartly sweet, onion-y goodness that I just can’t get enough of. Whether you’re planning to watch the big game or you’ll be avoiding it all by hanging out in your kitchen, this apple salsa is mandatory. Trust me.

If you’ve been reading my blog the past couple of months I’m sure you’re aware of my obsession with Opal Apples.  Opals are a cross between Topaz and Golden Delicious and besides being certified non-GMO (awesome!), they naturally resist oxidation so they’re slow to brown after you slice ‘em.

You know what that means? This salsa always looks fresh… even if you made it a day ahead of time and it’s been sitting overnight in the fridge!

I’ve made several variations of this recipe and I really like keeping it simple with diced apples, cilantro, and red onion. But, if you’re looking for more intensity, here are couple of other suggestions:

  • If you’re a fan of spicier salsa, a little minced jalapeño will definitely spice this up.
  • If you like the flavors of traditional salsa, a pinch of sea salt, garlic powder, and lime juice will add extra kick. (Note: I think raw minced garlic is too strong in this recipe so I would definitely opt for garlic powder if you’re interested in adding a bit of garlic flavor.)

And, if you don’t eat tortilla chips, don’t feel left out – it’s fabulous with homemade sweet potato chips! I’ve also used this salsa as a topping on grilled chicken, tossed in with green salads, and wrapped up in a collard green as a light snack. Yum!

Serves: 3½ cups
Ingredients
  • 2 Opal Apples, cored and finely diced (about 3 cups)
  • ½ medium red onion, finely diced (about ½ cup)
  • ¼ cup fresh cilantro, chopped
Instructions
  1. Toss ingredients together.
  2. Chill until serving.
