Glazed Donut Peaches

Is there anything better than fresh, local fruit in summer? Since I have a bit of a sweet tooth and I’m not a huge baker, fruit is one of my favorite desserts… especially when you make fruit taste like a donut. 😉

Hello glazed donut peaches!!

Are you familiar with donut peaches? You can find them at most farmers market in Seattle and the Pacific Northwest this time of year and they’re my favorite because they’re a bit sweeter than traditional peaches. Plus, who doesn’t love their fun shape?!

This simple recipe is one that I made a few years back (you may remember these glazed donut peaches with vanilla cremeamazing!) and called for adding a date and a touch of maple syrup to the cashew creme glaze to naturally sweeten it. I still love the original recipe, but I wanted to make a version that was sugar-free as much as possible (except for the natural sugars in the peaches).

These glazed donut peaches are the best way to indulge a sweet tooth and enjoy the last bit of summer!

A few notes about this recipe:

  • I used this brand of liquid vanilla stevia to sweeten the glaze
  • If you want the treat to have a softer and more donut-like texture, I would recommend peeling the peaches. This should be fairly easy to do with your fingers as long as they are fully ripe.
  • If you don’t have time to soak the cashews, you can skip this step and simply add more water. (Just know that the end cashew glaze might not be super smooth)
  • Freezing the peaches is absolutely optional and doesn’t impact the taste (it only helps to solidify the glaze and create a better texture)

Ingredients
  • 8 donut peaches
  • ½ cup raw cashews, soaked in water for at least 30 minutes, then drained
  • 2 - 3 tablespoons water (or more as needed)
  • 8 - 10 (or more to taste) drops liquid vanilla stevia
  • Pinch of cinnamon (optional)
Instructions
  1. Pit the peaches by using a small paring knife to cut around the middle and remove the pit. (If desired, peel peaches using your fingers.)
  2. Place peaches in freezer for 10 - 15 minutes to harden while you are preparing the glaze.
  3. Add cashews to a food processor or high-speed blender.
  4. Start by adding 2 tablespoons of water to the food processor and 8 drops of liquid stevia. Process until smooth and liquidfied (but not watery), scraping down the sides with a spatula as necessary. Add more water or stevia to taste if needed.
  5. Once glaze is ready, remove peaches from freezer and dip in glaze. Place peaches back in freezer for 10 minutes to allow the glaze to "set." Sprinkle with cinnamon (if desired) and serve immediately.
